Summer Salad
This morning I woke up and had some tea which Satish had made before he left. Had some cold cereal and most of the day was spend in front of my laptop searching for furniture for our new house. And before I knew it, it was time for lunch. I was searching for some easy recipes when I found this recipe.
This is what I had in my pantry and will form my ingredient list.
Boston lettuce- 1 whole head ( I left the whole leaves as is )
Cherry tomatoes- 10 or 15
Sliced mushrooms -6
Olive oil- 1/2 tbsp.
Garlic cloves sliced- 1 or 2
Onions diced- 1 medium
Balsamic vinegar- 1/2 tsp.
Capers drained 1 tsp
Salt and pepper to taste
This is the method
In a skillet, add oil after the pan is hot and add the onions and garlic and cook till soft and slightly brown. Add salt and pepper and remove from fire.
In a small bowl, add halved cherry tomatoes and add some salt to this. Add drained capers and balsamic vinegar to this. Adjust seasonings. I added sliced mushrooms to this just before plating so it does not get too soggy.
I plated it with the whole leaves on the bottom and just added the onion and tomato mixture on top. Some more freshly ground pepper on top and it looked perfect to me and it tasted light and wonderful.
Another serving idea that occurred to me was to add some grilled shrimp to this and to make small parcels or rolls from the lettuce leaves with the onion,tomato and shrimp filling.

Cooking blogs
I used to be the person who would run to the internet for any recipe. The food network was the place where I used to visit for almost all my recipes. And I would only try out the recipes that were rated. But now after entering the world of blogging all that is changed. I usually search for recipes from my favorie blogs. Cooking with Amy has never failed to make me happy with my cooking results. I made her lemon ricotta pancakes which were just incredible. Since I am going to be off for the next few days I am beginning to explore the blogs for recipes. Will write about how it goes.............
